Whip up these delicious Tuscan chestnut crêpes, filled with fresh greens, walnuts, and aged Parmesan for a flavorful treat!
TUSCAN RECIPE:
Ingredients for the crepes:
1 egg
A little whole milk or unsweetened almond beverage
Fresh chestnut flour from the new harvest
For the filling:
Radicchio
Arugula
Walnut halves
Aged Parmesan (30 months or older)
METHOD:
Start by preparing the crêpes and cooking them in a non-stick pan. Once ready, roll up a couple of crêpes at a time and cut them into slices about half a centimetre thick.
Separately, clean and chop the red radicchio (including wild varieties) and arugula. Dress with extra virgin olive oil, walnut halves, and thin slices of aged Parmesan.
Finish with a drizzle of balsamic vinegar for an incredibly flavorful result.
