How to make a good Carbonara?
The sauce can be made in just a few minutes.
You will only need
Organic wheat pasta, or Senatore Cappelli or ancient grains Good quality guanciale and/or pancetta in strips Egg yolks from free-range organic eggs to get a golden creamy texture Pepper to sprinkle Pecorino Romano (or well-aged Parmesan if you don’t like Pecorino) freshly grated That’s Carbonara Day!
Method:
Boil a pot of salted water to cook the pasta.
Meanwhile, fry the pancetta in a pan, cut into strips about 1cm thick, without adding olive oil. The pancetta will release its own fat and cook well. Be careful not to burn it, and once cooked, set it aside.
Meanwhile, whisk the egg yolks in a bowl, and add the Pecorino (or well-aged Parmesan) with a sprinkle of black pepper. Mix everything until you get a smooth cream.
Pour a ladle of pasta cooking water into the pan, along with the pancetta fat, and add the pasta just drained al dente. Toss well to flavour it.
At this point, remove from heat and pour the egg and Pecorino mixture into the pan. Stir quickly to combine.
For a creamier texture, you can add a little more pasta cooking water if needed.
Once cooked, add the crispy pancetta and stir one last time.
Serve immediately with more Pecorino/Parmesan grated on top and a pinch of black pepper… and enjoy! 😋

YES, and it satisfies not only the palate and the mind but also keeps you full!
But do eggs raise cholesterol?
NO. The liver produces cholesterol regardless of whether we introduce it through food.
Just be careful not to overdo it with the pepper if you suffer from acid reflux or upset stomach.
